Grilled Peach and Corn Salad is my new favourite salad. Fresh, colourful, healthy, and delicious.
I spent last week in beautiful, sunny Turkey.
Besides the heat and the sunshine, my favourite part was definitely the fresh fruit and vegetables.
The markets had an abundant amount of peaches, melons, apricots, tomatoes, cucumber, salad, corn, and so much more. For a veggie lover like me, it was heaven!
As peaches and corn on the cob are my absolute favourites from the market, I thought it was only appropriate to mix them together into a delicious salad.
For this salad, you’ll need a few peaches, corn on the cobs, salad leaves, onion, and mint leaves.
Everything about this is super. It’s super simple, super healthy, and SUPER delicious.
I LOVE this combo! Here’s why:
It’s colourful. Salads always make for the most colourful dishes.
It’s healthy. It’s full of vitamins, minerals, and healthy carbs.
It’s crunchy. The grilled corn adds a lovely crunch to the soft peaches. It really is the perfect combo.
It’s grilled! Eating plant-based does not mean you shouldn’t bring out the BBQ. Grilling the peaches make them even sweeter and tastier. They’re honestly so good.
Can you tell I’m a little excited about this recipe? I’m not typically a salad-kind-of-girl, but I’m loving this salad. I think you would too!
I suggest having this salad with roasted chickpeas, potatoes, couscous, or some other form of side dish that’ll make it a more filling meal. Alternatively, it’d be delicious as a starter.

- 2 corn on the cobs
- 2 large peaches
- 1/2 romaine lettuce head
- 1 small onion
- 1 small handful mint leaves
Heat up and prepare your grill.
Remove the leaves from the corns. I recommend cutting the corn in halves as it'll make it easier to get the corn off the cobs afterward.
Cut the peaches into wedges - about 8-10 wedges per peach.
Place the corn and peaches on the grill. Grill the corn for 6-8 minutes in total - turn it around occasionally. Grill the peach for 2-3 minutes on each side. Be aware that the grilling time is very dependent on your grill. Both the corn and the peaches may need a little less or a little more time than stated here so keep an eye on them.
In the mean time, chop the romaine lettuce into bite-size pieces and finely chop the onion and mint leaves.
Once the corn and peaches are done, take them off the grill. Use a sharp knife to cut off the corn from the cob.
Optional: cut the peach wedges into halves to make them bite-sized.
Combine everything in a large bowl and serve immediately.
