How many banana bread recipes can one person have on their blog?
I wouldn’t be surprised if I make a fifth next month.
This particular banana bread is completely foolproof, only requires two bowls and 10 ingredients.
It’s also both vegan and gluten-free!
Bananas were on sale last week, and like I always do, I bought waaay more than I was able to get through before they over ripened. Hence, the banana bread.
I usually go for a banana bread with chocolate. But this time, I was craving something a little different. So I swapped the chocolate with walnuts and added cinnamon and cardamom for extra flavour.
The result was a kitchen smelling wonderful, and a moist and flavourful banana bread.
I’m usually not a massive fan of walnuts but in a bread like this, I certainly am a fan. Besides flavour, they also add a nice crunch.
I’m warning you, this is so good, you’re gonna wanna eat it all.
This banana bread is perfect for snacking! I like to make my banana bread on Sundays as it means I’ll have it for snacking throughout the week. It’s also completely acceptable to have it for breakfast.
Another bonus is that this bread freezes really well. Either freeze it whole or divide it into single pieces. When you need it, simply reheat it in the oven. It’s also amazing if you let it slightly thaw before reheating it on your toaster.

- 3 banana (350 g)
- 1/3 cup unsweetened applesauce (81 g)
- 1/4 cup rice milk (60 ml/55 g)
- 1 cup buckwheat flour (140 g)
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp cardamom
- 1/2 tsp salt
- 1/2 cup walnuts, roughly chopped (46 g)
Preheat oven to 180° C (355° F).
In a bowl, mash the bananas. Add in the unsweetened applesauce and rice milk and mix.
In a second bowl, add and mix the flour, baking powder, baking soda, cinnamon, cardamom, and salt.
Add the banana mixture to the flour and stir until well combined.
Stir in the walnuts.
Pour the batter into a bread form aligned with baking paper. Alternatively, you can lightly cease the bread form in a little oil.
Bake in the oven for 35-40 minutes or until a tooth stick comes out clean.
