Seriously delicious, creamy, chocolate energy bites made with healthy ingredients? Yes, please!
I’ve made a variation of these countless of times by now. But I’m still impressed by its simplicity and deliciousness every time.
I’m always trying out new recipes that I can make during the weekend and snack on throughout the week. This weekend I opted for buckwheat cacao energy bites.
They are made with only 6 ingredients and requires about 15 minutes to make from start to finish.
The combo of buckwheat groats and dates makes for a perfect base, while the cacao powder adds a rich chocolate flavour, and peanut butter adds, even more, deliciousness and creaminess.
Even though the raw buckwheats are processed thoroughly, they still leave these energy bites with a nice crunch.
I seriously urge you to try these. They’re chocolatey, satisfying, rich, healthy, and kind of amazing.
I like to have a few of these with a cup of tea mid-afternoon or after dinner. I also love bringing these with me if I’m out and about as they’re easy to pack for on-the-go. These energy bites really are the perfect snack.

- 1 cup buckwheat groats (205 g)
- 1/2 cup cacao powder (43 g)
- 1 tsp vanilla powder
- 1 + 1/4 cup pitted dates (170 g)
- 1 tbsp peanut butter (20 g)
- Pinch of salt
- Optional: shredded coconut or cacao powder for rolling
Add the buckwheat groats to a food processor and blend until it almost has a flour-like consistency.
Add the remaining ingredients and blend again until everything is well combined. The result should be a moist, sticky mixture. If too dry, add some water (I ended up adding 3 tbsp). If too wet, add a bit more cacao powder.
Scoop out about 1 tbsp and shape into balls. There should be around 20 in total - more or less, depending on the size.
Optional: Roll in shredded coconut nut or cacao powder.
Store in an airtight container in the refrigerator for about 1 week or in the freezer for 1 month.
