This Cumin Orange Cashew Salad is a super quick and delicious salad made with cumin roasted orange, cashews and mixed green leaves. So delicious.
This cumin orange cashew salad immediately became very special to me. Even though it only contains four ingredients, it’s amazing. Mixed green leaves work as the base for this salad while orange, cashew nuts and cumin brings the flavour. The oranges are briefly roasted on a frying pan with some cumin, which releases the orange juice, making the orange pieces even tastier. The oranges are taken off the heat and the same pan is used to roast the cashew nuts. The nuts will ‘soak’ up the remaining orange juice and cumin in the pan, which makes them ever so delicious.
Roasting the cashew nuts really helps bring out their flavour. Orange juice and cumin compliment the subtle nutty flavour of cashew nuts extremely well. It may sound like an odd combination, but believe me, it’s so amazing.
This orange cashew salad is a relatively light salad so it should be served as part of a meal. It’s a perfect side dish for roasted vegetables and falafels. You can also serve it with something as simple as quinoa or brown rice.

- 3 cups mixed green leaves (125 g)
- 2 oranges
- 1/3 cup cashew nuts (50 g)
- 1 tsp cumin
- salt & pepper
Cut or tear the mixed greens into small pieces. Put them in a bowl and set aside.
Peel the oranges and cut them into small bite size pieces. Roast them with cumin, salt and pepper on a dry frying pan over medium heat. No oil is required as the oranges contain enough juice to prevent them from sticking to the pan. Cook the oranges for about five minutes.
Take the oranges off the pan and add them to your bowl of greens. Roast the cashew nuts on the same pan for 3-5 minutes or until they are slightly golden.
Take the cashew nuts off the heat and mix them with the oranges and greens. Serve immediately.
This salad doesn't keep well even if kept in the fridge.
