These Nutella Banana Sweet Potato Boats are vegan, perfectly sweet, filling, healthy, and SO delicious. Great for breakfast or dessert!
Last week I shared a recipe for a creamy hazelnut chocolate spread. This week I’m giving you a way to use it.
For this recipe, I’m combining three of my favourites – homemade Nutella, banana, and sweet potato. What a great combo.
The first step is to bake the sweet potato in the oven until tender. This usually takes about 45 to 60 minutes, which gives you plenty of time to make your own chocolate spread. I highly recommend making it yourself to avoid the added sugar and oil from many store-bought brands.
Once the sweet potatoes are all soft and juicy, you slice them open and loosen some of the flesh with a fork. Then you add banana slices, chocolate chips, a drizzle of maple syrup, and a spoonful of chocolate spread.
So simple, yet so good.
I hope you’ll love these boats! Here’s why I think you will:
They’re perfectly sweet. My homemade chocolate spread, which is not super sweet, pairs well with the sweet potatoes and chocolate chips.
They’re filling. The combo of the carbs from the sweet potatoes and the fat and protein from the hazelnuts makes this a filling and satisfying meal.
They’re healthy. Hazelnuts and sweet potatoes are both so good for you. Hazelnuts have a high amount of protein, monounsaturated fat (the healthy kind), and potassium, while sweet potatoes are boosting with beta-carotene (vitamin A).
They’re SO delicious. Anything that involves sweet potatoes, nut butter, and/or chocolate will always be good.
These sweet potato boats would be excellent as a dessert or even breakfast if you have the time in the morning. They’re perfect as is but adding fresh berries is also delicious!

- 2 medium sweet potatoes
- 1 banana
- 2 tsp Nutella
- 1-2 tsp maple syrup
- 1 small handful dark chocolate chips
Preheat your oven to 200° Celsius/395 Fahrenheit.
Use a fork to poke holes in your sweet potatoes. Place them on a baking tray and bake them in the oven for 45-60 minutes or until tender and juice is coming out of the holes. The cooking time can be halved by slicing the sweet potatoes in half and baking them with the flesh side down.
If making your own Nutella, follow the instructions from this recipe. I made my nutella a little thinner by mixing it with a teaspoon of water but this step is completely optional.
Once the sweet potatoes are done, slice them open and loosen some of the skin with a fork. Add a few banana slices and chocolate chips, drizzle with maple syrup and nutella.
