These Peanut Butter Pretzel Bars are made from only 6 simple and healthy ingredients. Vegan + oil-free, refined sugar-free, and gluten-free.
Considering 10% of my blog is already snack bar recipes, I think it’s safe to say, I’m a little obsessed with them.
These bars are inspired by my peanut butter trail mix bars but kept even simpler with only 6 ingredients!
They come together so easily. Quickly too! Think 5 minutes to mix everything together and 30 minutes in the freezer. If you can wait that long, that is. I couldn’t. I ended up eating it by the spoonful straight out of the bowl. Sorry, not sorry.
As I was snacking on one these yesterday, I was talking to my brother on the phone. I told him, he should be upset he wasn’t in Aarhus today to taste these amazing bars.
Fast forward less than 2 hours, I’m at the football arena waiting for my dad when I suddenly see my brother. I thought he was in Aalborg, which is two hours away. I was a little surprised, to say the least.
Fast forward another 20 minutes, we’re waiting for the game to start, when I suddenly think of these bars again (read: always thinking about food). All excitedly I “punch” my brother and tell him, he should have told me he was coming so I could have brought him one of those bars.
By now, my dad is seriously disappointed that I didn’t think to bring him one as I knew he was coming all along. Sorry, dad. Next time!
At the end of the day, my brother and parents didn’t get the chance to stop by my place. Hence, they didn’t get to try these delicious bars.
More for me though. I’ll never complain about that.
Anyway, back to the recipe.
In case you’re still not convinced, let me introduce these peanut butter pretzel bars. They are:
slightly crunchy from the pretzels, but otherwise chewy
oil-free, gluten-free, and refined sugar-free
made with only 6 basic ingredients
packed full of simple, healthy ingredients
perfect as a post-workout snack
These bars are also amazing as an afternoon pick-me-up or dessert. You can even have them for breakfast and totally get away with it.

- 1 cup dates, pitted (143 g)
- 1/4 cup water (60 ml)
- 1/4 cup peanut butter (55 g)
- 1 cup oats (90 g)
- 1/2 cup brown rice puffs (14 g)
- 1 cup pretzels (50 g), more for topping
Blend the dates with the water in a small food processor or blender. Add in the peanut butter and blend until smooth.
In a bowl, mix oats and brown rice puffs. Slightly crush the pretzels and add them to the bowl.
Stir in the date mixture until everything combined and a sticky dough is formed.
Transfer to a 20x20 cm (8x8 in) dish or other small pan lined with baking paper. Use the back of a spoon to press down to get them really packed tight. This is important as it'll help them stick together.
Place in the freezer for 20-30 minutes to harden.
Remove the bars from the dish and chop them into 9 even bars.
Store in airtight container in the fridge for 1 week or in the freezer for over a month. I recommend keeping them in the freezer to keep them extra firm and fresh, but the fridge is fine as well.
