A seriously delicious, nutritious, 4-ingredient pineapple mint smoothie. A refreshing, plant-based light breakfast, afternoon snack or late-night dessert.
Today I have a very simple and healthy recipe for you – a pineapple mint smoothie.
Summer is somewhat here (read: slightly warmer, but windy, cloudy, or rainy weather) and I’m craving fresh foods like this smoothie.
You only need 4 ingredients, 5 minutes and 1 blender to make this. It certainly doesn’t get much easier than this.
Sweet, juicy pineapple has always been one of my favourite fruits. It’s relatively expensive in Denmark so not doable on a student budget. It’s rarely on sale but when it is, you can count on me buying one or two (or three, who knows?).
As pineapple is so precious to me, I’ll mostly eat it on its own as a snack or have a (heaping!) bowl of it with my oats in the morning.
Last week though I ended up having too much ripe pineapple for me to eat fresh so I decided to freeze some. Definitely not a bad thing because it led to this delicious smoothie!
And apparently, I’m a little obsessed with using mint in my smoothies because I also add it to my green ones. There’s just something magical about mint, I guess.
This smoothie is refreshing, light, sweet, and delicious. It’s also highly nourishing as it’s full of vitamins and minerals, and healthy carbs.
It makes for a light breakfast, afternoon pick-me-up, or lovely dessert.

- 1 1/2 cup frozen pineapple (210 g)*
- 1/2 banana, fresh or frozen
- 5-6 large mint leaves
- 1 cup water
Simply add everything to a blender and blend until smooth! Adjust the amount of water to your preferred consistency.
*fresh works too. Add a few ice cubes to make it colder.
