AMAZING Sweet Potato Risotto! Comes together in 40 minutes and only requires 10 basic ingredients. Hearty, creamy and delicious.
This sweet potato risotto has become my new favourite to eat rice. It’s the perfect comfort food.
This dish comes together in about 40 minutes, with less than 10 minutes of prep! It also only asks for 10 ingredients. What more could you want?
The base of this dish is, obviously, rice but sweet potatoes are added too. Bring on the carbs!
I also added some onion, garlic and stock powder for a little more flavour and served it with steamed kale for a vitamin A and calcium boost. Serving it with kale is completely optional. This risotto is also delicious on its own.

- 1 small onion, chopped finely
- 2 garlic cloves, minced
- 1 cup brown rice (190 g)
- 1 medium sweet potato (about 280 g)
- 2 tsp vegetable stock powder (sub: use vegetable stock liquid instead of water)
- 2 cups water (500 ml)
- Salt & pepper
- Lemon or lime juice, to serve
- Optional: kale, to serve
Fry the onion and garlic in a large pot. Add a splash of water to prevent them from burning.
Add rice and water and bring it to a boil.
Cut the sweet potatoes into small cubes and add them to the pot.
Cook for about 30 minutes or until the rice is done and all the water has been absorbed.
Optional: steam the kale for 5 minutes
Season the risotto with salt and pepper. Squeeze lemon or lime juice over it and serve.
