Some days you just need a burger, am I right?
Today was one of those days for me.
In fact, it’s been one of those days for me all week. I was craving burgers for days, just didn’t get around to go to the grocery store until yesterday. I blame the exams and not my laziness. Either way, it’s time for burgers!
These patties have walnuts, chickpeas, oats, and mushrooms in them. They’re flavoured with a combination of paprika, thyme, oregano, and rosemary. And for a deeper flavour, I added soya sauce.
For my toppings, I went with grated carrot, onion, salad leaves, vegan chili mayo, and a more than generous serving of hummus.
Spoiler alert: it was delicious.
But go with whatever your heart desires. The second time I had these, I added some avocado. That might have made it even better.

- 1/2 cup walnuts (42 g)
- 1 can chickpeas
- 8 mushrooms (100 g)
- 2 tbsp soya sauce*
- 1 tsp paprika
- 1 tsp thyme
- 1 tsp oregano
- 1 tsp rosemary
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/3 cup oats (30 g)**
- 4 whole grain burger buns
- Grated carrot
- Hummus
- Avocado
- Onion
- Salad leaves
- Chili sauce

Preheat the oven to 185° C (365° F).

Add the walnuts to a food processor and process until crumbly and almost flour-like.

Add the rest of the ingredients and process until well combined and smooth.

Form into four patties and place on a baking tray.

Bake in the oven for 30-35 minutes or until firm and slightly golden brown.

Optional: warm the burger buns in the oven for 5 minutes.

Serve it with your desired toppings.

Store leftover patties in the fridge for at least 5 days.
*substitute with tamari to make it gluten-free
**gluten-free if necessary
