Almond Butter Energy Bites

These Almond Butter Energy Bites are the perfect snack! Easy and quick, healthy, perfectly sweet, and very delicious. Vegan + gluten-free option.

  • 1 cup pitted dates (147 g)
  • 1/2 cup oats (47 g*)
  • 1/2 cup ground almonds (50 g)
  • 2 tbsp almond butter (40 g)
  • 1 tsp vanilla powder
  • 1/4 tsp salt
  • Optional: 10 almonds, for coating


  1. Add all of the ingredients, except the almonds and blend again until everything is well combined and smooth. If too dry, add water one 1 tbsp at a time. If too wet, add ground almonds one 1 tbsp at a time.
  2. Scoop out about 1 tbsp and shape into balls. There should be around 15 in total - more or less, depending on the size.
  3. Optional: finely chop the almonds and roll the bites in them.
  4. Store in an airtight container in the refrigerator for at least 1 week or in the freezer for 1 month. Storing them in the fridge will give them a slightly softer texture (which I prefer).
