These Almond Butter Energy Bites are the perfect snack! Easy and quick, healthy, perfectly sweet, and very delicious. Vegan + gluten-free option.
1cuppitted dates (147 g)
1/2cupoats (47 g*)
1/2cupground almonds (50 g)
2tbspalmond butter (40 g)
Optional: 10 almonds, for coating
Add all of the ingredients, except the almonds and blend again until everything is well combined and smooth. If too dry, add water one 1 tbsp at a time. If too wet, add ground almonds one 1 tbsp at a time.
Scoop out about 1 tbsp and shape into balls. There should be around 15 in total - more or less, depending on the size.
Optional: finely chop the almonds and roll the bites in them.
Store in an airtight container in the refrigerator for at least 1 week or in the freezer for 1 month. Storing them in the fridge will give them a slightly softer texture (which I prefer).
