Crunchy Almond Cookies

These Crunchy Almond Cookies are super simple, super healthy, and super delicious. Gluten-free, refined sugar-free, oil-free, and entirely plant-based.

  • 1 cup almonds (150 g)
  • 1/3 cup almond butter (80 g)
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 tsp vanilla powder
  • 2 tbsp coconut sugar (20 g)
  • 2 tbsp maple syrup (36 g)
  • 1 tbsp water


  1. Ground the almonds in a food processor.
  2. Add all of the remaining ingredients and blend again. If too crumbly, add water 1 tsp at a time until you're able to press the dough together and form and a cookie.
  3. Let the dough chill in the fridge for 30 minutes.
  4. Preheat the oven to 180° C (355° F).
  5. Divide the dough into 20 equal parts, roll them into small balls, and use your hands to press them down to form a 1/2 inch thick cookie.
  6. Bake in the oven for 12-15 minutes or until golden brown and slightly crispy. The cookies harden up once cooled.
  7. Let cool on a wire.
  8. Store in airtight container at room temperature. Stays fresh for 4-5 days.
