Walnut Mushroom Chickpea Burger

These Walnut Mushroom Chickpea Burgers are easy to make, super healthy, packed full of flavour, and delicious. 11 basic ingredients, vegan, and gluten-free option.

Ingredients

  • 1/2 cup walnuts (42 g)
  • 1 can chickpeas
  • 8 mushrooms (100 g)
  • 2 tbsp soya sauce*
  • 1 tsp paprika
  • 1 tsp thyme
  • 1 tsp oregano
  • 1 tsp rosemary
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/3 cup oats (30 g)**
  • 4 whole grain burger buns

Suggested toppings:

  • Grated carrot
  • Hummus
  • Avocado
  • Onion
  • Salad leaves
  • Chili sauce

Instructions

  1. Preheat the oven to 185° C (365° F).
  2. Add the walnuts to a food processor and process until crumbly and almost flour-like.
  3. Add the rest of the ingredients and process until well combined and smooth.
  4. Form into four patties and place on a baking tray.
  5. Bake in the oven for 30-35 minutes or until firm and slightly golden brown.
  6. Optional: warm the burger buns in the oven for 5 minutes.
  7. Serve it with your desired toppings.
  8. Store leftover patties in the fridge for at least 5 days.
