  • 3 banana (350 g)
  • 1/3 cup unsweetened applesauce (81 g)
  • 1/4 cup rice milk (60 ml/55 g)
  • 1 cup buckwheat flour (140 g)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp cardamom
  • 1/2 tsp salt
  • 1/2 cup walnuts, roughly chopped (46 g)


  1. Preheat oven to 180° C (355° F).
  2. In a bowl, mash the bananas. Add in the unsweetened applesauce and rice milk and mix.
  3. In a second bowl, add and mix the flour, baking powder, baking soda, cinnamon, cardamom, and salt.
  4. Add the banana mixture to the flour and stir until well combined.
  5. Stir in the walnuts.
  6. Pour the batter into a bread form aligned with baking paper. Alternatively, you can lightly cease the bread form in a little oil.
  7. Bake in the oven for 35-40 minutes or until a tooth stick comes out clean.
