Spiced Banana Bread

Ingredients

  • 2/3 cup dates (90 g)
  • 3 bananas
  • 1/4 cup almond milk (or any non-dairy milk)
  • 1 cup ground almonds (100 g)*
  • 1 cup oats (80 g)
  • 2 tsp baking powder
  • 1/2 tsp cardamom
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt

Instructions

  1. Soak the dates in water for 5-10 minutes.
  2. Preheat oven to 180 degrees Celsius
  3. Ground the oats using a blender, foodprocessor or similar until it gets a flour-like consistency. Mix the oats with grounded almonds, baking powder, cardamom, cinnamon, nutmeg and salt.
  4. Drain the dates and mash them together with the bananas using the back of a fork. Mix the mashed dates and bananas with the almond milk before adding them to the dry ingredients. Mix everything well together.
  5. Align a loaf pan with parchment paper and pour the batter into it. Spread it out evenly and bake for 40-45 minutes or until a toothstick comes out clean of the middle. Allow to cool down before serving.
  6. Store in airtight container.

Recipe Notes

* if you do not have ground almonds, simply use a blender, foodprocessor or similar to ground whole almonds. The consistency should be very similar to regular flour.
